Wood Duck Ramen Stir Fry

Wood ducks are arguably the most beautiful North American waterfowl. The beaver pond provided one of the more beautiful sunrises I’ve ever seen to top off a successful morning.

Wood Duck Ramen Stir Fry
Marinade:
1/2 cup low-sodium soy sauce
1/3 cup lite rice vinegar
1/3 cup apricot preserves
1 tbsp light brown sugar
3 tbsp minced garlic
1 tbsp minced gingerroot
Ingredients:
4-6 duck breast, cut into thin strips
2 tbsp butter
2 green bell peppers, julienned
1/2 cup shredded carrots
1/2 yellow onion, julienned
2 packages cooked ramen noodles, discard flavor packet
Stir fry sauce (I used Bibibop sesame ginger teriyaki stir fry sauce)
1. Combine all marinade ingredients in a bowl and whisk together. Add in duck breast strips and marinate for at least 4 hours.
2. In a skillet, heat oil over medium heat. Add in duck strips and stir-fry for 2 minutes. Add in butter and vegetables.
3. Continue cooking until duck is cooked to desired doneness. Add in stir fry sauce as desired. Stir in cooked ramen noodles and serve.
