Slow Cooker Rabbit Teriyaki

Rabbit is a staple in our house and this recipe is definitely here to stay. You can easily substite rabbit for venison, wild turkey or even chicken!




Ingredients:

  • 2-3 rabbits, bone in, quartered

  • 1/2 of a yellow onion, julienned

  • 1/2 cup soy sauce

  • 1/4 cup honey

  • 1/4 cup brown sugar

  • 1/4 cup apple cider vinegar

  • 2 cloves garlic, minced

  • 2 tbsp corn starch mixed in 1/4 cup water

  • 1 green onion


Cooking Instructions:

  1. Place rabbit and onions in the bottom of a slow cooker.

  2. Combine soy sauce, honey, vinegar, brown sugar, and garlic in a small bowl. Pour over rabbit.

  3. Cook on high setting for 3-4 hours or on low setting for 6-8 hours.

  4. Remove rabbit pieces from slow cooker and cut meat off the bone.

  5. Pour sauce from slow cooker into small saucepan. Combine cornstarch with water, then add to sauce. Over medium heat, bring sauce to a low boil, stirring often. Cook another minute, until sauce is thickened.

  6. Pour thickened sauce over rabbit. Serve with rice and garnish with sliced green onions.
